Pascha Bread
When it comes to the holiday and festive breads, the varieties and secret family recipes are endless. This is especially evident in the various Greek breads. Artos is the general name given for Greek celebration breads, but they are given specific names and twists for specific holidays. For instance, the color and the decorations may be different for Christmas bread than they are for pascha bread since Christmas is the holiday of the incarnation while pascha is the holiday of resurrection. Pascha Breads often carry the Turkish name of tsoureki and almost always has a red hard boiled egg on top. Our Pascha Bread is rich and creamy in texture because it is loaded with unsalted butter, homogenized milk, demerara sugar and Mastic (a spice native to the Greek island of Chios). Finally, each loaf is eggwashed and sprinkled with sesame seeds before it hits the ovens.
