Our Red Fife Ciabatta is made using the same organic heritage red fife grain used to create our Red Fife Batard. For this loaf, we add a natural poolish starter. Similar to our Ciabatta and Paesano loaves, the Red Fife Ciabatta has a porous, chewy interior, making it perfect for dunking in your favorite bread dipping oil, or paired with your favorite soup or stew.
